The ingredients needed to make Kerala style veg stew:
  1. Make ready 1 tbsp coconut oil
  2. Make ready 2 cloves/ lavang
  3. Take 1 inch cinnamon / dalchini
  4. Make ready 2 pods cardamom
  5. Take 1 bay leaf
  6. Make ready 2 onion sliced
  7. Get 10 french beans cut into 1inch
  8. Make ready 1 carrot chopped
  9. Take 1 potato cubed
  10. Prepare 10 florets cauliflower
  11. Take 2 green chillies slitted
  12. Make ready 1 inch ginger julienne
  13. Prepare 1 cup water
  14. Make ready 1 tsp salt
  15. Prepare 2 cup coconut milk thin
  16. Take few curry leaves
  17. Make ready 1/2 cup coconut milk thick

Served with Palappam, Vellayappam, Aval Appam, Idiyappam, Pooris, Rotis or Bread, it is very popular like Puttu and Kadala curry combination. Mild an flavorful vegetable stew ,usually served with palappam. Remove the lid , add thick coconut milk and cook for few more minutes. Heat oil/ghee in a pan,add curry leaves and saute for few seconds.

Steps to make Kerala style veg stew:
  1. In a large kadai heat 1 tbsp coconut oil and saute cloves, cinnamon,bay leaf and cardamom.
  2. Add onions and saute till they shrink slightly. do not brown the onions.
  3. Add  beans, carrot, potato, cauliflower, green chilli and  ginger. - saute for a minute.
  4. Add 1 cup water, 1 tsp salt and few curry leaves. mix well.
  5. Cover and boil for 5 minutes or till vegetables are half cooked.
  6. Now add 2 cup coconut milk (thin consistency) and mix well.
  7. Cook till vegetables are cooked completely.
  8. Turn off the flame and add few curry leaves, 1/2 cup thick coconut milk and mix well.
  9. Serve Kerala style vegetable stew with idiyappam or appam.

Remove the lid , add thick coconut milk and cook for few more minutes. Heat oil/ghee in a pan,add curry leaves and saute for few seconds. Add this to the vegetable stew and stir gently. Vegetable stew aka 'Ishtu' is traditional Kerala style dish served with Appam. Minimal ingredients and the simplicity of the recipe is what wins you over.

You digest these grains faster than other foods which can help promote your blood sugar levels, which, in turn, helps make you feel more pleasant, mood wise.
