Steps to make Kerala Style Chicken Roast:
  1. Take Chicken  clean and marinate  with chili powder,coriander powder, ginger/garlic paste,turmeric powder and salt.Mix well and keep aside for 4 hours.
  2. Take a pan and add oil,cumin seeds,shallots sliced,curry leaves.Mix well and add grated coconut
  3. Add the marinated chicken and mix well.Close the lid and cook till the chicken is done.
  4. Once the chicken is 90% done add pepper powder,green chilies,  Garam masala and cook till the chicken is dry.Do not cover with lid now.
  5. Once the chicken is dry garnish with fresh curry leaves and coriander leaves and serve.
