Put the tofu into the griddle pan to cook; you'll need to turn these over halfway through cooking the mushroom sauce!

The ingredients needed to make Sig's Tofu and Mushroom Pasta:
  1. Get 250 grams Smoked tofu, cut into small bite sized pieces
  2. Take 1 can Italian whole tomatoes
  3. Prepare 2 marinaded chared sweet Italian red peppers
  4. Take 150 grams Cepe or button mushrooms ,quartered
  5. Prepare 1 tsp Smoked paprika
  6. Make ready 1 pinch of dried chilli flakes
  7. Make ready 2 tbsp chopped chives
  8. Get 1 pinch of salt or salt substitute or to taste
  9. Prepare 1 small pinch of dried thyme
  10. Make ready 1 tbsp dried parsley
  11. Prepare 1 tsp dried dill
  12. Make ready 1 small pinch of fenugreek
  13. Prepare 2 large cloves of garlic , crushed
  14. Take 1 tbsp fresh fine grated Parmesan cheese
  15. Get 1 tbsp olive oil, extra virgin plus a little extra for pasta if preferred
  16. Get 4 to 5 drops of Maggi liquid seasoning
  17. Get 2 to 3 tablespoon evaporated milk
  18. Make ready 300 grams of vegan or ordinary pasta depending on preferences

Drain and rinse with cold water to stop it cooking. I'm so happy there are brands like The Vegan Dairy out there bringing incredible vegan products to the market that are not only high quality but good for the planet too. This is hands down one of the best 'creamy' pastas I've ever made. Add tofu, celery, ginger, chile, soy sauce, and sesame oil to pan.

Steps to make Sig's Tofu and Mushroom Pasta:
  1. Mix all the ingredients , gently breaking down the tomatoes , except the tofu .Heat the mixture gently until it thickens naturally.
  2. Cool down slightly . If it is not the thickness that you prefer you can add a packet of a mushroom cup a soup.
  3. Add the tofu , stir in gently and set aside to marinate
  4. Cook your pasta of choice, I like tagliatelle with this .
  5. Halfway through cooking pasta gently heat the mixture of sauce in a separate pot to the pasta, adding the tofu to it, simmer on a low heat, until the pasta in its own pot, has finished cooking, about 10 minutes or so, depending on what pasta you use and or how you like your pasta.
  6. When the pasta is cooked , drain it , add a little extra oil and a pinch of nutmeg to it .
  7. Serve the tofu/mushroom mixture over your pasta.
  8. Enjoy

This is hands down one of the best 'creamy' pastas I've ever made. Add tofu, celery, ginger, chile, soy sauce, and sesame oil to pan. Heat olive oil dutch oven over medium-high heat. Add onion, and stir to coat with oil. Crumble tofu into very small pieces over the onion.
