  1. Prepare 2 kg Fresh Crayfish

Instructions to make Spicy and Hot Chinese Style Crayfish:
  1. Wash the fresh crayfish
  2. Cut off the Crayfish legs. Be careful not to cut off their claws as there is plenty of meat in these as well
  3. Heat up some oil in a wok and then add all the spices and fry until you smell the aroma of the spices
  4. Add the fresh Crayfish into the wok and fry together with the spices
  5. Add boiling water to the wok until it covers all of the crayfish
  6. Add oyster sauce, cooking wine, salt, sugar and chicken power and stir the Crayfish. Boil the Crayfish for 15mins with the lid on the wok
  7. When finished take the Crayfish out and place them onto a plate ready to serve
